OATMEAL COOKIES WITH HAZELNUTS

 

Oatmeal cookies are a bit boring without nuts or dried fruit bits. I have a large jar of raw hazelnuts down in the freezer and I wanted to do something with them so I thought I combine the oatmeal cookie with hazelnuts. Following my basic cookie recipe I baked up a batch of it with hazelnuts. I prefer hazelnuts with the dark skin on, so I decided not to roast them. 

OATMEAL COOKIES WITH HAZELNUTS 
3/4 cup soft butter 
1/2 cup sugar 
1/2 cup brown sugar 
1 egg 
1-1/4 cups flour 
1 tsp baking soda 
1-1/2 cups old-fashioned oats 
1 1/2 cups whole hazelnuts

  • Preheat the oven to 375F.
  • Line a couple of large baking sheets with parchment paper.
  • Cream the butter and sugars until light and fluffy.
  • Beat in the egg.
  • In a separate bowl whisk together the flour and baking soda.
  • Add to the creamed mixture and mix well.
  • Stir in the oats and mix well.
  • Finally stir in the hazelnuts.
  • Drop by tablespoonfuls 2 inches apart onto the prepared baking sheets.
  • Bake the cookies in the preheated oven for 9 to12 minutes or until lightly browned.
  • Let the cookies solidify and then move to wire racks to cool.
  • This recipe yields 2 1/2 to 3 dozen cookies.

What started out as a private project turned into a well visited blog. The number of visitors long passed the two million mark. I organized the recipes into an on-line cookbook. I am not profiting from my blog, so visitors are not harassed with advertising or flashy gadgets. The recipes are not broken up with photos at every step. Where needed the photos are placed following the recipe. Feel free to cut and paste my recipes for your own use.
