Oatmeal cookies are a bit boring
without nuts or dried fruit bits. I have a large jar of raw hazelnuts down in the freezer
and I wanted to do something with them so I thought I combine the oatmeal
cookie with hazelnuts. Following my basic cookie recipe I baked up a batch
of it with hazelnuts. I prefer hazelnuts with the dark skin on, so I decided not to roast them.
3/4 cup soft butter
1/2 cup sugar
1/2 cup brown sugar
1 egg
1-1/4 cups flour
1 tsp baking soda
1-1/2 cups old-fashioned oats
1 1/2 cups whole hazelnuts
- Preheat the oven to 375F.
- Line a couple of large baking sheets with parchment paper.
- Cream the butter and sugars until light and fluffy.
- Beat in the egg.
- In a separate bowl whisk together the flour and baking soda.
- Add to the creamed mixture and mix well.
- Stir in the oats and mix well.
- Finally stir in the hazelnuts.
- Drop by tablespoonfuls 2 inches apart onto the prepared baking sheets.
- Bake the cookies in the preheated oven for 9 to12 minutes or until lightly browned.
- Let the cookies solidify and then move to wire racks to cool.
- This recipe yields 2 1/2 to 3 dozen cookies.
