GLAZED YAMS IN MINUTES

Either as a vegetable or starch on the plate how much yam you really need? No more than a fistful of chopped yams per person. Yams are dense and take time to cook, so speeding up the cooking process in the microwave and completing it in a skillet is a sensible solution. The following recipe serves four. 

GLAZED YAMS IN MINUTES
2 cups peeled and chopped yam or sweet potato 
3 Tbsp water 
2 Tbsp light olive oil 
2 Tbsp butter 
3 Tbsp honey or brown sugar 
salt to taste 
  • Wash and chop the yam. No need to peel. 
  • Place the chopped yam with water in a microwavable bowl. 
  • Cover and microwave for 5 minutes. 
  • Remove and let it sit for a few minutes. 
  • When the yam cooled somewhat, remove the skins. They will just slide off. 
  • Next place the oil and butter in a nonstick skillet over medium heat. 
  • Transfer the yams to the skillet. 
  • Add the honey or brown sugar and sprinkle with salt. 
  • Gently stir with a wooden spoon, heat through and serve.

I am not profiting from my blog, so visitors are not harassed with advertising or flashy gadgets. The recipes are not broken up with photos at every step. Where needed the photos are placed following the recipe. Feel free to cut and paste my recipes for your own use.
