BUTTER FRIED PARSNIPS

 

I made this simple yet delicious side dish from a gigantic winter parsnip Jimre just dug up the other day. It was so big I only used half of it. Now I wish I took a picture before chopping it to pieces. It reminded me of the gigantic turnip in the Russian fairytale. Not that I think of Russia with fondness these days. Russia is brutally overrunning a country again. You think Hungary would remember the Russian atrocities committed during WW2 and stand by the victim country. But then again Hungary does remember… and chooses to thread the waters...very carefully. Ah Zsuzsa… you better forget the turnip and stay in the kitchen. 

BUTTER FRIED PARSNIPS
3 medium parsnips
1 Tbsp olive oil
2 Tbsp butter
salt to taste

  • Peel the parsnips, and discard the woody core if any.
  • Cut the remaining pieces into short shoestring sticks.
  • Melt the oil and the butter in a large frying pan.
  • Fry over low medium heat until crisp and golden.
  • Season with salt and serve immediately.

It began with posting a few recipes on line for the family. "zsuzsa is in the kitchen" has more than 1000 Hungarian and International recipes. What started out as a private project turned into a well visited blog. The number of visitors long passed the two million mark. I organized the recipes into an on-line cookbook. I am not profiting from my blog, so visitors are not harassed with advertising or flashy gadgets. The recipes are not broken up with photos at every step. Where needed the photos are placed following the recipe. Feel free to cut and paste my recipes for your own use.
