Maybe because he lived on his own for ten years. Many years ago he told me he had enough cold food for the rest of his life. All right, I said, I don’t want to but I will cook for you.  I had a bit of ham and cheese. I checked on line for ham and cheese croquettes, but ever so often it is worth looking for a simplified version on the Hungarian web.  

Ham And Cheese Croquettes

3 medium potatoes, peeled and chopped
3/4 cup flour
1/2 cup hard white cheese
1/3 cup ham
salt and pepper to taste
1 egg
fresh parsley sprig, finely chopped
fine breadcrumbs

  • Cook and drain the potatoes.
  • Mash them and let them cool to room temperature.
  • Add the remaining ingredients.
  • Combine and form into small balls.
  • Roll into breadcrumbs.
  • Deep fry in hot oil.
