Cheese sauce begins with a simple b├ęchamel. When the sauce is ready, remove from heat and stir in the grated cheese. Use cheddar or other hard cheeses. Get all the ingredients ready before you begin to cook the b├ęchamel. Using a whisk, stir the mixture continuously to ensure that there are no lumps.

2 Tbsp butter
2 Tbsp flour
2 cups milk
1 cup grated sharp Cheddar cheese

• Set out all the ingredients.
• In a large saucepan, melt the butter over low heat.
• Stir in the flour.
• Gradually add the milk, stirring until well mixed.
• Cook over low heat, stirring constantly, until thickened and smooth.
• Cook for 5 minutes longer.
• Remove from heat and add the grated cheese.
• Stir until smooth and well blended.
• Serve as required and sprinkle with nutmeg.
