EGGY DUMPLINGS - TOJÁSOS NOKEDLI

Eggy nokedli is one of Olivia's favorite. The secret to good eggy dumplings is to cook the eggs in  residual heat to a "juicy" stage. Pour the beaten eggs over the hot nokedli, then quickly remove  from heat. Stir the eggs into the nokedli with a wooden spoon and serve immediately. 

EGGY DUMPLINGS
1 batch of Nokedli
3 Tbsp melted butter
4 eggs

• Rinse the dumplings under cold running water.
• Drain the dumplings shaking the colander to remove all excess water.
• In another bowl, lightly beat the eggs with a balloon whisk. 
• Add salt to taste.
• Heat the oil in a pan, add the dumplings and heat it through.
• Pour in the beaten eggs and quickly remove pan from heat.
• Stir with a wooden spoon and serve immediately.

I am not profiting from my blog, so visitors are not harassed with advertising or flashy gadgets. The recipes are not broken up with photos at every step. Where needed the photos are placed following the recipe. Feel free to cut and paste my recipes for your own use.
